Made with raw A2 Jersey cow milk; this firm paste is aged for 6 months. This ochre-orange colored rind cheese has a light golden paste dotted with little ‘"eyes" and fruity aromas.
Its name is in honour of François-Xavier Soucy, the first dairy farmer to settle in St-Edouard-de-Lotbinière. Patrick Soucy represents the 6th generation of producers to settle in the region
