Kept in brine for 60 days, the feta des Broussailles is rare: a raw sheep milk feta, certified organic. Firm and compact, it is easy to crumble or slice thinly. Its level of salt is well balanced to leave room for the milky, slightly citrusy aromas. Definitely a taste of summer.
