To be outstanding, to dare the unique.
Jason Fuoco knew right from his early twenties that he wanted to create a unique artisan cheese in Québec. Buffalo milk, being a rare product, he sees it as an enticing challenge. This will be the beginning of his cheesemaking journey. Its in the Spring of 2023 that la Fromagerie Fuoco will finally be established in Saint-Lin-Laurentides near the farm. Therefore, it became the largest Canadian milk processing cheesemaker dedicated exclusively to buffalo milk.
"My father was a gentleman farmer", says Jason. "Tending to the land, animals and gardens was always second nature in my family. It was self-evident that my passion for agriculture and my love of cheese would go hand in hand."
Located in the village of St-Lin-Laurentides in the Lanaudière region, the farm acquired its first small herd of water buffalo from Vancouver Island. Today the herd counts around 80 of these remarkable animals that are powerful and yet gentle. Jason makes sure that they get the utmost care and quality food. The animals are fed quality dry hay, which gives their milk a little sweet taste.
